Has it been a year?

I briefly considered leaving this post for another 3 weeks so at least it is a whole year since I last posted. But no, since I will be making an effort to blog regularly, it seems too much of a risk for me to postpone again.

The last year has been great but oh boy, has it been busy! I travelled a lot, baked a lot but most importantly, we made the decision to settle with G. and bought our own flat! It is still being built, but I have spent many sleepless night fussing over my new kitchen and oven.

RangeMaster or Belling? Silver or red? 90cm wide or 100cm wide? Electric or gas? Is RangeMaster really worth the money? So many decisions lie ahead but I am excited to be able to bake more than a tray of 12 cupcakes at a time and to have enough storage space and worktops once the flat is finished. The uninterrupted sea views over the Mediterranean and the parking spot are just extras for me..

Anyways, while I do have about a million photos I could upload or a million things to say, let’s take things one at a time. Speak soon!

I am still here and still baking, by the way. I know I have been seriously slacking off around here but loads of baking, 3 business trips in the last 4 weeks, loads of other activities, fostering a tiny kitten and trying to have a social life really took its toll.

I am really looking forward to this coming (long, thankfully) weekend which also happens to be Easter weekend. This means 4 days off in which I hopefully manage to catch up on sleep, visits to Spain, maybe a BBQ (weather permitting), and best of all, time to blog!

There is a Mother’s Day post, ‘The Big Baking Job’ post, a baby shower post, maybe a kitten post and few more coming. See you soon!

GLUTEN FREE CUPCAKES AND A SNEAK PEAK!

Today I have 3 exciting stories to share! 4 actually if we count I finally was able to produce (and reproduce) cream cheese frosting which I was able to pipe! ButI think I will dedicate a separate post to this as it is a huge milestone!

So here are 3 pictures with my 3 stories.

I have been wanting to try gluten free baking for a while. This Saturday I was finally brave enough to attempt it. I used my favorite white chocolate and strwaberry cupcake recipe and simply replaced the plain flour with gluten free one (it was made of corn). My baking powder is anyways gluten free and the rest of the ingredients are safe. I was very nervous because I had never really looked into gluten free baking and wasn’t sure if just substituting the flour would give me the desired result or something else had to be done. But I followed my gut and ended up with these delicious beauties. Success!

So my other half has been saying he’d like to me to teach him to bake. At first I thought he’s joking but he asked me again this week so today, he baked his first ever batch of cupcakes and I only helped chop the strawberries, he did everything else himself. They came out amazing! So proud of him!

In my last post I talked about my photography drama. But then awesome Whitney came along and said she’s itching to take photos of food (she prefers it to taking photos of people – aren’t I lucky to have such friends???), and I happened to have some cupcakes and we ended up arranging a mini photo shoot in the kitchen this afternoon while drinking coffee and chatting. She is working on the photos and I haven’t seen them even on the camera so I am totally excited to see them soon and share a few here!

On a different note, I am off to Vienna tomorrow for a week so please bare with me. I will be back soon enough!

Plenty of work travel and lack of Internet at home have led to my disappearance from this blog. If blog-shaming.com existed, I’d be a regular.

I do, however, have a lush chocolate and courgette cake recipe (and photos to share) but seeing as it is Friday, and Valentine’s day all at once, it will have to wait a little longer.

Until then – a cheerful little video which always cheers me up!

CUPCAKES ON AN ADVENTURE!

Tomorrow my other half and official taster has his birthday! Of course, he has to have a cake so today I have been very busy in the kitchen. Soon I will share photos and recipe for his favorite white chocolate chip and strawberry cupcakes but just wanted to share quickly (before I hit the bed – baking is hard work!) the adventures part of his birthday cupcakes had!

We have again been blessed with amazing weather in Gibraltar – now, I ask, doesn’t this call for another cupcake picnic? To avoid the guilt of eating cake, we first hiked/climbed the Mediterranean Steps and when we reached the top, we had some cheeky sparkling rose and cupcakes! I am happy to report they all survived the bumpy road up and made our exercise all the more worth it!

Because it is Friday today and because it has been a very long week and because who wouldn’t want to ride a unicorn to the store when bored and eat magic cake from a magic bakery?

BUSY, BUSY BEE

This week has been completely manic at work so not only did I not have time to bake, I couldn’t even think about baking or crafts! Sad times…

But there are 3 milestones I would like to share:

  • I installed WordPress on my iPhone so now I should be able to blog on the go (as a matter of fact I am testing the app right now!)
  • We had home made cake in the office twice this week and I didn’t make either one! We had Sacher and Swedish princess cake – lovely! Seems like my passion is contagious.
  • I finally organised all my crafty supplies. Until today they were in a state of complete mess, scattered around the whole apartment. So it would normally take me longer to find everything in order to do crafts, which was really off putting. I hope now I have an extra motivation! Here is my new crafts corner:

On another note, I am off to Vienna for work next week and since most hotels don’t normally come with a fully equipped kitchen, you might not hear from me much. Hope to be back here (and baking) soon!
